- 8 oz softened cream cheese
- 8 oz tub whipped topping
- 14–16 oz large can crushed pineapple, drained
- 3/4 cup confectioner’s sugar
- 1/2 cup pineapple chunks (for topping)
- 1/2 cup shredded coconut (for topping)
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup melted butter
Instructions
- Mix graham cracker crumbs, sugar, and melted butter until well combined to prepare crust.
- Press the mixture into an 8×8 or 9×9 inch pan and chill.
- Beat softened cream cheese and confectioner’s sugar until smooth, then add whipped topping and beat until fluffy.
- Gently fold in the drained crushed pineapple.
- Spread the pineapple cream mixture over the chilled crust.
- Top with pineapple chunks and shredded coconut.
- Cover and refrigerate for at least 240 minutes or overnight.
- Slice and serve chilled.
Notes
For an extra touch, add a sprig of mint or drizzle chocolate sauce on top. Make sure to drain the crushed pineapple well to avoid sogginess.
