Description

A refreshing and creamy dessert combining tropical flavors of pineapple and coconut, perfect for hot days and gatherings.


Ingredients

  • 8 oz softened cream cheese
  • 8 oz tub whipped topping
  • 1416 oz large can crushed pineapple, drained
  • 3/4 cup confectioner’s sugar
  • 1/2 cup pineapple chunks (for topping)
  • 1/2 cup shredded coconut (for topping)
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup melted butter

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter until well combined to prepare crust.
  2. Press the mixture into an 8×8 or 9×9 inch pan and chill.
  3. Beat softened cream cheese and confectioner’s sugar until smooth, then add whipped topping and beat until fluffy.
  4. Gently fold in the drained crushed pineapple.
  5. Spread the pineapple cream mixture over the chilled crust.
  6. Top with pineapple chunks and shredded coconut.
  7. Cover and refrigerate for at least 240 minutes or overnight.
  8. Slice and serve chilled.

Notes

For an extra touch, add a sprig of mint or drizzle chocolate sauce on top. Make sure to drain the crushed pineapple well to avoid sogginess.
