Description

A light and creamy dessert combining tropical pineapple flavor with a smooth cream cheese filling and a crunchy graham cracker crust.


Ingredients

  • 8 oz tub whipped topping
  • 1416 oz large can crushed pineapple, drained
  • 3/4 cup confectioner’s sugar
  • 1/2 cup pineapple chunks (for topping)
  • 1/2 cup shredded coconut (for topping)
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup melted butter

Instructions

  1. Mix the graham cracker crumbs, sugar, and melted butter until well combined to prepare the crust.
  2. Press the mixture into an 8×8 or 9×9 inch pan and chill in the fridge while preparing the filling.
  3. Beat the softened cream cheese and confectioner’s sugar until smooth for the filling.
  4. Add the whipped topping and beat until fluffy.
  5. Gently fold in the drained crushed pineapple.
  6. Spread the pineapple cream mixture over the chilled crust.
  7. Add pineapple chunks and shredded coconut on top.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Slice and serve chilled for a tropical delight!

Notes

Ensure cream cheese is softened for better mixing. Drain the pineapple well to avoid excess moisture. Store in the refrigerator for up to 5 days, or freeze for longer storage.
