- 8 oz softened cream cheese
- 8 oz tub whipped topping
- 14–16 oz large can crushed pineapple, drained
- 3/4 cup confectioner’s sugar
- 1/2 cup pineapple chunks (for topping)
- 1/2 cup shredded coconut (for topping)
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup melted butter
Instructions
- Mix the graham cracker crumbs, sugar, and melted butter until well combined to prepare the crust.
- Press the mixture into an 8×8 or 9×9 inch pan and chill in the fridge while preparing the filling.
- Beat the softened cream cheese and confectioner’s sugar until smooth for the filling.
- Add the whipped topping and beat until fluffy.
- Gently fold in the drained crushed pineapple.
- Spread the pineapple cream mixture over the chilled crust.
- Add pineapple chunks and shredded coconut on top.
- Cover and refrigerate for at least 4 hours or overnight.
- Slice and serve chilled for a tropical delight!
Notes
Ensure cream cheese is softened for better mixing. Drain the pineapple well to avoid excess moisture. Store in the refrigerator for up to 5 days, or freeze for longer storage.
