A delightful no-bake cheesecake layered with creamy cheese and sweet pineapple, perfect for warm days.

- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 1 can (20 oz) crushed pineapple, drained
- 1 can (20 oz) pineapple rings, drained
- Fresh raspberries for garnish
- Whipped cream for topping
Instructions
- In a medium bowl, mix the graham cracker crumbs and melted butter until fully combined and press into the bottom of a 9×13-inch baking dish. Chill in the fridge.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth. In another bowl, whip the heavy cream to stiff peaks and gently fold into the cream cheese mixture.
- Spread half of the cream cheese mixture over the chilled crust, then distribute the crushed pineapple over it. Cover with the remaining cream cheese mixture.
- Arrange the pineapple rings on top and garnish with raspberries and whipped cream.
- Refrigerate for at least 4 hours or until set. Serve chilled.
Notes
Make sure your cream cheese is softened for smooth filling. For a tropical twist, add shredded coconut!
