Instructions

  1. In a medium bowl, mix the chocolate cookie crumbs with melted butter until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  2. In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy. Add the vanilla and peppermint extracts, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Add red food coloring, if desired, for a festive pink hue.
  4. Spread the filling evenly over the prepared crust. Cover and refrigerate for at least 240 minutes, or overnight, to set.
  5. Before serving, garnish with whipped cream, crushed peppermint candies, and chocolate shavings.
