- 20 gingersnap cookies
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese (room temperature)
- 3/4 cup granulated sugar
- 1/2 tsp allspice
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1/2 cup packed dark brown sugar
- 1/4 cup unsalted butter (room temperature)
- 1/4 cup heavy cream
- 1/4 cup light corn syrup
- 1 tsp vanilla extract
- 2 cups pecans, quartered
Instructions
- Lightly spray a 7-inch springform pan with cooking spray.
- Blend the gingersnap cookies in a food processor until fine crumbs form. Add the melted butter and blend until resembling wet sand. Press into the bottom of the springform pan and freeze for 15 minutes to set.
- In a large bowl, whisk cream cheese until smooth, then add sugar, allspice, salt, and vanilla extract, whisking until combined.
- Whisk heavy cream in a separate bowl until stiff peaks form and gently fold it into the cheesecake mixture. Pour filling into the prepared crust and smooth the top. Cover with plastic wrap and refrigerate for at least 6 hours to set.
- In a medium saucepan, melt butter and dark brown sugar over medium heat, stirring until melted. Off the heat, stir in heavy cream, light corn syrup, and vanilla extract. Mix in quartered pecans and let cool.
- Once set, remove the cheesecake from the pan and pour the cooled pecan topping over the cheesecake. Slice and serve.
Notes
Make sure cream cheese is at room temperature for a smooth filling. Store leftovers in the refrigerator for up to 4 days.
