Instructions
- In a large mixing bowl, beat together the peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Stir in the graham cracker crumbs until fully combined.
- Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Melt the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between, until smooth.
- Dip each ball into the melted chocolate, ensuring it is fully coated, then place them back onto the parchment paper.
- Refrigerate the cheesecake balls for at least 1 hour before serving.
