Description

A delightful No-Bake Peach Cheesecake that combines creamy cheesecake filling with a sweet peach compote on a crunchy crust—perfect for warm weather gatherings.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/3 cup pecan halves or candied pecans, finely chopped
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, room temperature
  • 14 ounces sweetened condensed milk
  • 2 teaspoons pure vanilla extract or vanilla bean paste
  • 8 ounces frozen whipped topping, thawed
  • 1 pound fresh or frozen sliced peaches
  • 1/2 cup packed light brown sugar
  • 3 tablespoons water
  • 1/4 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Whipped topping for garnish
  • Candied pecans for garnish

Instructions

  1. Prepare the crust: In a medium bowl, mix the graham cracker crumbs, chopped pecans, ground cinnamon, and melted butter. Stir until combined. Divide into 8 serving dishes and press to form a crust. Chill in the refrigerator.
  2. Make the cheesecake filling: In a stand mixer, beat cream cheese for about 3 minutes until smooth. Gradually add sweetened condensed milk while mixing on low speed. Stir in vanilla extract and mix for another 1-2 minutes. Gently fold in whipped topping. Spoon or pipe the filling into the prepared crusts and refrigerate again.
  3. Prepare the peach compote: In a medium saucepan over medium-low heat, combine sliced peaches, brown sugar, water, vanilla, and cinnamon. Cook until thickened (about 15-20 minutes). Let cool completely and store in the refrigerator.
  4. Assemble and serve: Top each cheesecake with peach compote, a dollop of whipped topping, and a sprinkle of candied pecans. Enjoy!

Notes

For a richer flavor, use homemade whipped cream instead of frozen topping. Adjust sweetness of the peach compote to your liking.
