- 1 package unflavored gelatin (4 envelopes, 7 grams each)
- 2/3 cup cold water
- 4 cups peach chunks (canned or fresh)
- 24 oz cream cheese, room temperature
- 8 oz mascarpone cheese, room temperature
- 1 1/2 cups white granulated sugar
- 1/2 cup cold heavy whipping cream
- 1 teaspoon vanilla extract
- 1 cup cold heavy whipping cream
- 3 tablespoons white granulated sugar
Instructions
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and sides of a springform pan or a 9×13-inch cake pan. Refrigerate for 20-30 minutes to set.
- In a small bowl, sprinkle gelatin on top of 2/3 cup cold water. Let it bloom for 1-2 minutes, then microwave for 30 seconds and whisk until fully combined.
- In a food processor, blend 2 cups of peach chunks until smooth.
- In a large bowl, mix cream cheese, mascarpone, and 1 cup of sugar until smooth using an electric mixer.
- In another chilled bowl, whip 1/2 cup heavy cream, 2 tablespoons of sugar, and vanilla on high speed until stiff peaks form, then fold into the cream cheese mixture.
- Combine the peach puree with the gelatin mixture, then fold into the cheesecake batter. Add the remaining peach chunks and gently mix.
- Spread the cheesecake mixture over the crust and refrigerate for 5-6 hours or overnight until set.
- Whip remaining heavy cream and 3 tablespoons of sugar on high until stiff peaks form, then pipe onto the cheesecake.
- Garnish with fresh peach chunks and refrigerate until ready to serve.
Notes
For best flavor, use fresh peaches. Ensure ingredients are at room temperature for a smooth filling.
