No Bake Peach Cheesecake

Description

A delicious and refreshing dessert that combines creamy cheesecake with sweet peaches, perfect for summer gatherings.


Ingredients

  • 2 cups graham cracker crumbs
  • 2 tablespoons white granulated sugar
  • 1 stick unsalted butter, melted
  • 1 package unflavored gelatin (4 envelopes, 7 grams each)
  • 2/3 cup cold water
  • 4 cups peach chunks (canned or fresh)
  • 24 oz cream cheese, room temperature
  • 8 oz mascarpone cheese, room temperature
  • 1 1/2 cups white granulated sugar
  • 1/2 cup cold heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream
  • 3 tablespoons white granulated sugar

Instructions

  1. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and sides of a springform pan or a 9×13-inch cake pan. Refrigerate for 20-30 minutes to set.
  2. In a small bowl, sprinkle gelatin on top of 2/3 cup cold water. Let it bloom for 1-2 minutes, then microwave for 30 seconds and whisk until fully combined.
  3. In a food processor, blend 2 cups of peach chunks until smooth.
  4. In a large bowl, mix cream cheese, mascarpone, and 1 cup of sugar until smooth using an electric mixer.
  5. In another chilled bowl, whip 1/2 cup heavy cream, 2 tablespoons of sugar, and vanilla on high speed until stiff peaks form, then fold into the cream cheese mixture.
  6. Combine the peach puree with the gelatin mixture, then fold into the cheesecake batter. Add the remaining peach chunks and gently mix.
  7. Spread the cheesecake mixture over the crust and refrigerate for 5-6 hours or overnight until set.
  8. Whip remaining heavy cream and 3 tablespoons of sugar on high until stiff peaks form, then pipe onto the cheesecake.
  9. Garnish with fresh peach chunks and refrigerate until ready to serve.

Notes

For best flavor, use fresh peaches. Ensure ingredients are at room temperature for a smooth filling.
