Description

Easy and delicious No-Bake Peach Cheesecake Bars with a creamy filling and sweet caramelized peaches on top, perfect for any occasion.


Ingredients

  • 400 g Digestive biscuits
  • 150 g unsalted butter, melted
  • 460 g cream cheese, room temperature
  • 75 g granulated sugar
  • 1 tsp vanilla extract
  • 245 ml whipped cream, room temperature
  • 5 peaches, sliced
  • 1/3 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp lemon juice
  • 3 tsp water
  • 3 tsp cornstarch
  • 1/4 cup all-purpose flour
  • 2 1/3 tsp brown sugar
  • 1 1/4 tsp granulated sugar
  • Pinch of salt
  • 1 tbsp unsalted butter, melted
  • Whipped cream (for topping)
  • Caramel (optional)

Instructions

  1. Crush the Digestive biscuits into fine crumbs using a food processor or a rolling pin. Mix the crumbs with melted butter until well combined. Press the mixture into an 8″ springform pan and refrigerate for 30 minutes.
  2. In a pot, combine the peaches, brown sugar, cinnamon, nutmeg, lemon juice, water, and cornstarch. Cook over medium heat for 8-12 minutes, stirring occasionally until caramelized. Let cool.
  3. In a pot, melt butter and mix in flour, sugar, and salt. Stir with a fork until crumbly, then let cool.
  4. Whisk the heavy cream until stiff peaks form. Gently fold in the cream cheese, sugar, and vanilla until smooth.
  5. Spread the cream cheese filling over the chilled crust. Top with cooled caramelized peaches and sprinkle streusel over. Cover and refrigerate for at least 6 hours.
  6. Slice into squares and top with whipped cream and caramel for extra decadence.

Notes

Use ripe peaches for the best flavor and sweetness. You can substitute Digestive biscuits with graham crackers if needed.
