A delightful no-bake cheesecake that combines creamy cheese with the tropical flavor of passionfruit, perfect for warm days and special occasions.

- 200g (7oz) digestive biscuits (or graham crackers)
- 85g (3oz) unsalted butter, melted
- 2 teaspoons powdered gelatine
- 1 cup whipping cream (250ml)
- 1/2 cup strained passionfruit pulp (125ml)
- 500g (1.1 pounds) cream cheese, softened
- 2/3 cup caster (superfine) sugar (140g / 4.9oz)
- 1/2 cup water (125ml)
- 1/4 cup caster (superfine) sugar (50g / 1.8oz)
- 1/2 cup strained passionfruit pulp (125ml)
- Passionfruit seeds (optional, for decoration)
Instructions
- Prepare the Base: Grease and line an 8-inch springform pan. Blitz the digestive biscuits in a blender until they turn into crumbs. Combine with melted butter and press evenly into the base. Set in the freezer.
- Make the Cheesecake Filling: Dissolve the gelatine in boiling water. Whip the cream until soft peaks form and refrigerate. Beat the cream cheese and sugar until smooth, then add the passionfruit pulp and gelatine mixture. Gently fold in the whipped cream. Pour over the base and chill.
- Prepare the Passionfruit Jelly: In a small saucepan, sprinkle the gelatine over water, let it soften, then heat until dissolved. Stir in sugar and passionfruit pulp. Cool to room temperature.
- Assemble and Chill: Pour the jelly over the cheesecake and chill for at least 4-6 hours or overnight.
- Serve: Gently ease the paper from the sides, release the spring clip, and lift the cheesecake onto a serving plate. Enjoy with extra passionfruit seeds if desired.
Notes
Let the jelly cool slightly before pouring it on the cheesecake to avoid melting the filling. Store covered in the fridge for up to 5 days.
