  • 1/2 cup orange juice
  • Zest of 1 orange
  • 1 cup whipped cream
  • 1/2 cup pineapple chunks
  • 1/2 cup mandarin orange slices
  • Fresh mint leaves and berries for garnish

Instructions

  1. Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate the crust for 30 minutes to set.
  2. Make the Cream Cheese Filling: In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition.
  3. Add Flavorings: Stir in the sour cream, vanilla extract, orange juice, and orange zest until fully combined.
  4. Layer the Cheesecake: Pour half of the cream cheese mixture over the chilled crust. Evenly distribute half of the pineapple chunks and mandarin orange slices on top of the mixture.
  5. Add Second Layer: Pour the remaining cream cheese mixture over the fruit layer.
  6. Create the Swirl: Drizzle extra orange juice or orange jelly on top and gently swirl with a knife for a marbled pattern.
  7. Refrigerate: Refrigerate the cheesecake for at least 4 hours or until completely set.
  8. Garnish and Serve: Before serving, top with whipped cream, pineapple chunks, mandarin orange slices, fresh mint leaves, and berries.
