- 1 1/2 cups graham cracker crumbs (or vanilla wafer crumbs)
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 1 package (3 oz) orange gelatin (Jell-O)
- 3/4 cup boiling water
- 1/2 cup cold orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup whipped topping (Cool Whip or homemade whipped cream)
- Extra whipped topping (for garnish)
- Orange zest (for garnish)
- Mandarin orange slices (for garnish)
- White chocolate shavings (for garnish)
Instructions
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until evenly coated. Press this mixture into a 9-inch pie pan and chill for 15 minutes.
- Dissolve orange gelatin in boiling water. Add cold orange juice, orange zest, and vanilla extract. Let this mixture cool. In another bowl, beat cream cheese and powdered sugar until smooth. Gradually mix in the cooled gelatin mixture, then fold in the whipped topping.
- Pour the filling into the chilled crust. Smooth the top and cover it. Refrigerate for at least 240 minutes until set. When ready to serve, top with extra whipped topping, orange zest, and mandarin orange slices.
Notes
Make sure your cream cheese is softened to room temperature for easier mixing. For extra flavor, consider adding a bit of citrus liqueur to the filling.
