Instructions
- Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan and refrigerate.
- Make the Orange Cream Cheese Layer: Bloom the gelatin in 3 tablespoons of cold water; whip 1 cup of heavy cream to stiff peaks.
- Beat cream cheese, powdered sugar, orange juice concentrate, and orange zest until smooth, then incorporate the melted bloomed gelatin and fold in whipped cream.
- Pour the mixture over the prepared crust and smooth the top. Refrigerate for 1-2 hours until set.
- Make the Classic Cheesecake Layer: Bloom the gelatin again, whip 1 cup of heavy cream to stiff peaks, and beat cream cheese, powdered sugar, and vanilla until smooth.
- Combine the bloomed gelatin with the cream cheese mixture and fold in whipped cream. Spread over the set orange layer and refrigerate for 2-3 hours until firm.
- Prepare the Gelatin: Dissolve orange gelatin mix in boiling water and let cool; pour over the cheesecake once set. Refrigerate until fully set.
