Ingredients

  • 12 ounces vanilla wafers
  • 1/2 cup granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar, divided
  • 2 cups heavy cream
  • 1 box (3 oz) orange Jell-O
  • 1 cup boiling water
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Zest of one orange

Instructions

  1. Pulse the vanilla wafers into fine crumbs.
  2. Mix crumbs with sugar and melted butter, then press into a springform pan.
  3. Chill the crust for 30 minutes.
  4. Beat cream cheese and 1 cup of sugar until smooth.
  5. Dissolve orange Jell-O in boiling water and let it cool.
  6. Whip heavy cream with vanilla, powdered sugar, and orange zest until stiff peaks form.
  7. Fold half of the whipped cream into the Jell-O, and the other half into the cream cheese mixture.
  8. Spread the cream cheese mixture on the crust and then top with the orange cream mixture.
  9. Chill the cheesecake for at least 4 hours or overnight before serving.

Notes

Store any leftovers in the refrigerator, covered, for 3 to 5 days. You can freeze individual slices for up to a month.
