- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 3/4 cup orange juice concentrate

- 2 tsp powdered gelatin (about 7 grams)
- 3 tbsp cold water
- 1 cup heavy cream (for classic cheesecake layer)
- 1 tsp vanilla extract
- 1 package (3 oz) orange-flavored gelatin mix
- 1 cup boiling water
- 1/2 cup cold water
Instructions
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until combined and press into the bottom of a 9-inch springform pan. Refrigerate.
- In a small bowl, bloom the gelatin in cold water for about 5 minutes.
- Whip 1 cup of heavy cream until stiff peaks form.
- In another bowl, mix cream cheese, powdered sugar, orange juice concentrate, and optional orange zest until smooth. Melt the bloomed gelatin and blend it in, then fold in whipped cream.
- Pour the orange cream filling over the crust and chill for 1-2 hours until set.
- For the classic cheesecake layer, bloom another 2 tsp of gelatin in 3 tbsp of cold water. Whip another cup of heavy cream until stiff peaks form.
- Beat cream cheese and powdered sugar with vanilla until smooth, add melted gelatin, and fold in whipped cream.
- Spread this mixture over the set orange layer and chill for 2-3 hours until firm.
- Prepare the orange gelatin topping by dissolving the orange gelatin mix in boiling water, then add cold water. Pour over the cheesecake layer.
- Refrigerate until fully set. Serve with whipped cream and orange slices.

Ensure cream cheese is at room temperature for easy mixing. Adjust orange juice concentrate based on your taste preference.
