A delightful no-bake cheesecake that combines creamy cheesecake with a refreshing burst of orange flavor, perfect for warm days or celebrations.


Ingredients

  • 12 ounces vanilla wafers
  • 1/2 cup granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar, divided
  • 2 cups heavy cream
  • 1 box (3 oz) orange Jell-O
  • 1 cup boiling water
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Zest of one orange

Instructions

  1. Prepare the Crust: In a food processor, pulse the vanilla wafers until you have fine crumbs. Add 1/2 cup granulated sugar and melted butter, and pulse until everything is mixed well. Press this mixture into the bottom of a 9-inch springform pan and chill in the refrigerator for 30 minutes.
  2. Make the Filling: In a mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar together until smooth. Then, dissolve the orange Jell-O in boiling water, and let it cool slightly.
  3. Whip the Cream: In another bowl, whip the heavy cream, powdered sugar, vanilla extract, and orange zest until stiff peaks form.
  4. Combine Ingredients: Gently fold half of the whipped cream into the cooled orange Jell-O. Then, fold the other half of the whipped cream into the cream cheese mixture.
  5. Assemble the Cheesecake: Spread the cream cheese layer over the chilled crust. Top this with the orange cream mixture.
  6. Chill: Place the cheesecake in the fridge and chill for at least 240 minutes or overnight before serving.

Notes

For a stronger orange flavor, add extra orange zest or use fresh orange juice in the filling. Make sure the cream cheese is softened before mixing for a smooth filling.
