- 5 oz (150g) digestive biscuits or graham crackers
- 3 tbsp (45g) butter, melted
- 3.5 oz (100g) raspberries
- 3.5 oz (100g) blackberries
- 3.5 oz (100g) blueberries
- 1/4 cup (50g) sugar
- 1 tbsp (15ml) lemon juice
- 1 tbsp (15ml) water
- 1/2 tbsp (5g) gelatin powder
- 2 tbsp (30ml) cold water
- 10 oz (300g) cream cheese, room temperature
- 1 3⁄4 cup (400g) whipping cream, 35% fat
- 1/2 cup (60g) powdered sugar
- 1/2 tbsp (5g) gelatin powder
- 2 tbsp (30ml) cold water
Instructions
- Prepare the Berry Sauce: In a saucepan, combine the raspberries, blackberries, blueberries, sugar, lemon juice, and water. Simmer for about 15 minutes until the mixture thickens. Once done, strain the sauce to remove seeds.
- Prepare Gelatin: Dissolve 1/2 tbsp (5g) gelatin powder in 2 tbsp (30ml) cold water, let it bloom for a few minutes, then mix it with the berry sauce.
- Prepare the Crust: Crush the digestive biscuits or graham crackers and mix them with the melted butter. Press this mixture into the bottom of a springform pan to form your crust.
- Prepare Cream Cheese Mixture: In a bowl, mix the cream cheese with powdered sugar until smooth. In another bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Create Layered Mixtures: Divide the cream cheese mixture into three bowls. Mix two-thirds of the berry sauce with one bowl, the remaining sauce with another, and leave one bowl plain.
- Layer the Cheesecake: Start by pouring the deep purple mixture into the springform pan. Freeze for 10-15 minutes. Add the light purple mixture next, freeze again, and top with the plain mixture. Refrigerate for at least 6 hours or overnight.
- Garnish and Serve: Before serving, garnish the cheesecake with fresh berries and mint leaves.
Notes
For a firmer cheesecake, consider adding a touch more gelatin. Use fresh berries for the best flavor, but frozen can also be used if thawed and drained well.
