- 150g (1 1/2 cups) graham cracker crumbs
- 50g (1/4 cup) brown sugar
- 75g (1/3 cup) unsalted butter, melted
- 400g (1 1/2 cups) cream cheese, softened
- 200g (1 cup) powdered sugar
- 200ml (3/4 cup) heavy cream
- 1 tsp vanilla extract
- 100g (1/2 cup) caramel sauce
- 100g (1/2 cup) milk chocolate, melted
- 50g (1/2 cup) pecans, chopped
Instructions
- Prepare the Crust: In a bowl, combine the graham cracker crumbs, brown sugar, and melted butter. Mix until evenly combined. Spoon into mini cheesecake pans or cupcake liners and press down firmly. Refrigerate.
- Make the Cheesecake Filling: Beat cream cheese and powdered sugar until smooth. Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture. Spoon the filling onto crusts and smooth the tops. Refrigerate for at least 4 hours or until set.
- Add the Toppings: Drizzle caramel sauce over the top, then drizzle melted chocolate and sprinkle with chopped pecans.
- Serve & Enjoy: Serve these bite-sized desserts directly from the pans or liners.
