- 50g (1/4 cup) brown sugar
- 75g (1/3 cup) unsalted butter, melted
- 400g (1 1/2 cups) cream cheese, softened
- 200g (1 cup) powdered sugar
- 200ml (3/4 cup) heavy cream
- 1 tsp vanilla extract
- 100g (1/2 cup) caramel sauce
- 100g (1/2 cup) milk chocolate, melted
- 50g (1/2 cup) pecans, chopped
Instructions
- Prepare the Crust: In a bowl, mix the graham cracker crumbs, brown sugar, and melted butter until well combined. Spoon this mixture evenly into the bottoms of mini cheesecake pans or cupcake liners. Press down firmly to form the crust. Refrigerate while making the filling.
- Make the Cheesecake Filling: Beat the cream cheese and powdered sugar together until smooth and creamy. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.
- Assemble the Cheesecakes: Spoon the cheesecake filling onto the prepared crusts and smooth the tops. Refrigerate for at least 240 minutes or until set.
- Prepare the Toppings: Drizzle caramel sauce over each mini cheesecake. Then, drizzle with melted chocolate and sprinkle with chopped pecans.
