Delicious and easy to make, these no-bake mini chocolate cheesecakes are perfect for any occasion and are sure to satisfy your chocolate cravings.

- 1 1/2 cups chocolate wafer crumbs (or graham cracker crumbs)
- 1/4 cup unsalted butter, melted
- 2 tbsp granulated sugar
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- 4 oz semi-sweet chocolate, melted and cooled slightly
- Whipped cream (optional)
- Chocolate shavings or mini chocolate chips (optional)
Instructions
- In a medium bowl, combine the chocolate wafer crumbs, melted butter, and sugar. Stir until well combined and the mixture resembles wet sand. Spoon about 1 tablespoon into the bottom of each mini cheesecake cup, pressing down firmly to create an even crust layer.
- Beat the cream cheese and powdered sugar together until smooth. In a chilled bowl, whip the heavy cream with vanilla until stiff peaks form. Fold the whipped cream into the cream cheese mixture, then gradually fold in the melted chocolate.
- Spoon the cheesecake filling over the crust in each cup, filling them evenly. Refrigerate for at least 4 hours or overnight to set.
- Garnish each cheesecake with whipped cream and chocolate shavings or mini chocolate chips. Serve chilled and enjoy!
Notes
Store any leftover mini cheesecakes in an airtight container in the refrigerator for up to 3 days, adding fresh toppings right before serving.
