A refreshing no-bake dessert with a crunchy pretzel base, creamy cheesecake, and a fruity gelatin topping.
Ingredients

- 1 cup crushed pretzels
- 1/2 cup salted butter, melted
- 2 tablespoons granulated sugar
- 8 oz package cream cheese, softened
- 1 1/2 cups whipped topping (like Cool Whip)
- 6 tablespoons granulated sugar
- 6 oz orange-flavored gelatin (like Jell-O)
- 11 oz can mandarin oranges
- 3/4 cup boiling hot water
- 1/2 cup cold water + ice
Instructions
- In a small bowl, combine the crushed pretzels, melted butter, and 2 tablespoons of sugar. Press about 2 tablespoons of this mixture into the bottom of an 8-ounce cup or jar to form the crunchy base.
- In another bowl, mix the softened cream cheese, whipped topping, and 6 tablespoons of sugar until smooth. Add about 1/4 cup of this cheesecake mixture on top of the pretzel base and smooth it out. Freeze for 20 minutes.
- Boil 3/4 cup of water, then stir in the gelatin until it dissolves. Add the cold water with ice until the total reaches 1 1/2 cups. Stir in the hot gelatin until it begins to thicken. Refrigerate for 5 minutes.
- Pour the thickened gelatin over the cheesecake layer in the cups. Top with mandarin oranges. Refrigerate until fully set, about 20 minutes. Optional: Garnish with whipped cream before serving.
Notes
For extra flavor, add orange zest to the cheesecake layer. Can substitute different flavors of gelatin and fruits.
