No Bake Lemon Raspberry Cheesecake Parfaits

Description

Delicious and easy no-bake lemon raspberry cheesecake parfaits with layers of creamy filling and crunchy cookies.


Ingredients

Scale
  • 24 Nilla wafer cookies, crushed
  • 16 oz cream cheese, softened
  • 400g lemon-flavored smooth cottage cheese
  • 1/4 cup confectioners’ sugar
  • 180 ml raspberry pie filling
  • 1 can Gay Lea Real Whipped Cream
  • Fresh raspberries for garnish (optional)

Instructions

  1. Prepare the Crust: Crush the Nilla wafers and place half in the bottom of each glass.
  2. Make the Cheesecake Filling: Mix the cream cheese, lemon cottage cheese, and confectioners’ sugar until smooth.
  3. Spoon half the cheesecake filling into each glass and set the rest aside.
  4. Add Raspberry Layer: Spoon raspberry pie filling into each glass.
  5. Layer 2: Add remaining crushed Nilla wafers, then cheesecake mixture, followed by another layer of raspberry pie filling.
  6. Top and Chill: Finish with whipped cream and fresh raspberries, then refrigerate for at least 1 hour.

Notes

For a different flavor, try using strawberry pie filling or chocolate wafers.
