Delicious and easy no-bake lemon raspberry cheesecake parfaits with layers of creamy filling and crunchy cookies.

- 24 Nilla wafer cookies, crushed
- 16 oz cream cheese, softened
- 400g lemon-flavored smooth cottage cheese
- 1/4 cup confectioners’ sugar
- 180 ml raspberry pie filling
- 1 can Gay Lea Real Whipped Cream
- Fresh raspberries for garnish (optional)
Instructions
- Prepare the Crust: Crush the Nilla wafers and place half in the bottom of each glass.
- Make the Cheesecake Filling: Mix the cream cheese, lemon cottage cheese, and confectioners’ sugar until smooth.
- Spoon half the cheesecake filling into each glass and set the rest aside.
- Add Raspberry Layer: Spoon raspberry pie filling into each glass.
- Layer 2: Add remaining crushed Nilla wafers, then cheesecake mixture, followed by another layer of raspberry pie filling.
- Top and Chill: Finish with whipped cream and fresh raspberries, then refrigerate for at least 1 hour.
Notes
For a different flavor, try using strawberry pie filling or chocolate wafers.
