- 1/2 cup boiling water
- 1/2 cup iced water
- 8 oz. cream cheese, softened

- 1 (14 oz.) can sweetened condensed milk
- 1/4 cup freshly squeezed lemon juice
- 1 1/2 cups whipped cream
- 3 tablespoons butter
- 1/3 cup freshly squeezed lemon juice
- 1 1/2 teaspoons lemon zest
- 1/3 cup sugar
- 1 egg
- 1 egg yolk
- Whipped cream (for serving)
- Mint leaves (for garnish)
Instructions
- Prepare the Pan: Line a 9 x 9 x 2-inch pan with aluminum foil or plastic wrap, lightly grease, and set aside.
- Make the Graham Cracker Crust: In a bowl, mix the crushed graham crackers and melted butter. Press this mixture into the bottom of the pan and refrigerate until firm.
- Prepare the Lemon Cheesecake Filling: Dissolve the lemon gelatin in the boiling water, then add iced water and set aside. In another bowl, beat the cream cheese and sugar until smooth, then blend in the sweetened condensed milk and lemon juice. Stir in the cooled gelatin mixture and gently fold in the whipped cream. Spread the filling over the crust and refrigerate until set.
- Make the Lemon Curd: In a saucepan, melt the butter. Whisk in the sugar, lemon zest, and lemon juice. Then, add the whisked egg and egg yolk. Cook over low heat until thickened. Once thick, allow it to cool.
- Assemble the Bars: Once the cheesecake filling is set, spread the lemon curd over the filling. Slice into bars.
- Serve: Serve the bars with a dollop of whipped cream and a few mint leaves for garnish.
