No Bake Lemon Cheesecake Bars

Description

Delicious and refreshing no bake lemon cheesecake bars that are easy to make and perfect for any occasion.


Ingredients

  • 1 1/2 cups finely crushed graham crackers
  • 1/3 cup melted butter
  • 1 (3 oz.) package lemon-flavored gelatin
  • 1/2 cup boiling water
  • 1/2 cup iced water
  • 8 oz. cream cheese, softened
  • 1/4 cup sugar
  • 1 (14 oz.) can sweetened condensed milk
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 cups whipped cream
  • 3 tablespoons butter
  • 1/3 cup freshly squeezed lemon juice
  • 1 1/2 teaspoons lemon zest
  • 1/3 cup sugar
  • 1 egg
  • 1 egg yolk
  • Whipped cream (for serving)
  • Mint leaves (for garnish)

Instructions

  1. Line a 9 x 9 x 2-inch pan with aluminum foil or plastic wrap, lightly grease, and set aside.
  2. In a bowl, mix the crushed graham crackers and melted butter. Press this mixture into the bottom of the pan and refrigerate until firm.
  3. Dissolve the lemon gelatin in the boiling water, then add iced water and set aside.
  4. In another bowl, beat the cream cheese and sugar until smooth, then blend in the sweetened condensed milk and lemon juice. Stir in the cooled gelatin mixture and gently fold in the whipped cream. Spread the filling over the crust and refrigerate until set.
  5. In a saucepan, melt the butter. Whisk in the sugar, lemon zest, and lemon juice. Add the whisked egg and egg yolk. Cook over low heat until thickened, then allow to cool.
  6. Once the cheesecake filling is set, spread the lemon curd over the filling. Slice into bars.
  7. Serve with a dollop of whipped cream and a few mint leaves for garnish.

Notes

For best results, ensure the cream cheese is softened to room temperature. Use fresh lemons for optimal flavor.
