- 8 oz chocolate wafer cookies (or graham crackers)
- 16 oz whipped cream (or homemade with 12 oz heavy cream + 2 oz powdered sugar)
- 1 tsp vanilla extract
- Optional: shaved chocolate, cocoa powder, or berries for garnish
Instructions
- If using homemade whipped cream, beat together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread a thin layer of whipped cream in the bottom of a loaf pan or preferred dish.
- Layer with cookies and then add more whipped cream. Repeat the layers until finished with whipped cream on top.
- Cover the cake and refrigerate for at least 4 hours, preferably overnight.
- Once chilled, slice the cake and garnish with shaved chocolate, cocoa powder, or fresh berries before serving.
Notes
Store any leftovers in the refrigerator covered, and it will stay fresh for up to 3 days. Use full-fat whipped cream for creamier texture.
