- 2 cups Oreo crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips, melted
- 1/2 cup heavy cream
- 1/4 cup cocoa powder
- Melted white chocolate (for decoration)
- Mini chocolate chips (for decoration)
- Crushed Oreos (for decoration)
Instructions
- Line a mini muffin tin with paper liners.
- In a bowl, combine the Oreo crumbs and melted butter. Press about 1 tablespoon of the mixture into the bottom of each muffin liner to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add in the powdered sugar and vanilla extract, mixing until fully incorporated.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips with heavy cream in 30-second intervals, stirring between each interval, until smooth and fully melted. Stir in the cocoa powder, then add this melted chocolate mixture to the cream cheese filling, mixing until combined.
- Spoon the chocolate cheesecake filling over the Oreo crust in each liner, smoothing the tops.
- Refrigerate the bites for at least 120 minutes, or until fully set.
- Once set, drizzle melted white chocolate over the cheesecake bites and sprinkle with mini chocolate chips and crushed Oreos for added crunch and decoration.
- Keep the bites chilled until ready to serve and enjoy!
