Ingredients

  • 1 cup rolled oats
  • 1 cup crispy rice cereal (like Rice Krispies)
  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line an 8×8-inch square pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the rolled oats, crispy rice cereal, and a pinch of salt.
  3. In a small saucepan, heat the nut butter and honey (or maple syrup) over medium heat, stirring until smooth.
  4. Pour the warm mixture over the dry ingredients and stir well.
  5. Stir in optional chocolate chips while still warm.
  6. Transfer mixture to prepared pan and press down firmly.
  7. Refrigerate for about 2 hours until firm.
  8. Remove from the pan and cut into squares or bars.

Notes

For a chewier texture, let the bars set in the fridge overnight. Adjust the sweetness to your preference. Mix in dried fruits or nuts for extra flavor.
