- 1 cup rolled oats
- 1 cup crispy rice cereal (like Rice Krispies)
- 1/2 cup nut butter (such as almond or peanut butter)
- 1/4 cup honey or maple syrup
- 1/2 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Line an 8×8-inch square pan with parchment paper or lightly grease it.
- In a large mixing bowl, combine the rolled oats, crispy rice cereal, and a pinch of salt.
- In a small saucepan, heat the nut butter and honey (or maple syrup) over medium heat, stirring until smooth.
- Pour the warm mixture over the dry ingredients and stir well.
- Stir in optional chocolate chips while still warm.
- Transfer mixture to prepared pan and press down firmly.
- Refrigerate for about 2 hours until firm.
- Remove from the pan and cut into squares or bars.
Notes
For a chewier texture, let the bars set in the fridge overnight. Adjust the sweetness to your preference. Mix in dried fruits or nuts for extra flavor.
