- 8 ounces (226g) cranberries
- 6 tablespoons (75g) granulated sugar (for cranberry sauce)
- 1 to 2 teaspoons orange zest
- 1 teaspoon orange juice (for cranberry sauce)
- 1/2 cup (118ml) water
- 2 1/2 cups (250g) Biscoff cookie crumbs
- 3 tablespoons (38g) granulated sugar (for crust)
- 6 tablespoons (85g) unsalted butter, melted
- 24 ounces (680g) cream cheese, room temperature
- 3/4 cup (150g) granulated sugar (for filling)
- 1 teaspoon orange juice (for filling)
- 1 cup heavy cream
Instructions
- Make the Cranberry Sauce: In a saucepan, combine cranberries, 6 tablespoons of sugar, orange zest, 1 teaspoon of orange juice, and water. Bring to a boil, then lower heat and simmer for about 10 minutes until cranberries soften. Let cool.
- Make the Crust: Preheat oven to 350°F (175°C). Mix Biscoff cookie crumbs, 3 tablespoons of sugar, and melted butter together. Press evenly into the bottom and sides of an 8-inch springform pan. Bake for 10 minutes; let cool.
- Make the Cheesecake Filling: Beat cream cheese, 3/4 cup sugar, and 1 teaspoon orange juice until smooth. Whip heavy cream until stiff peaks form and fold into cream cheese mixture.
- Assemble the Cheesecake: Spread half of the cheesecake mixture over the cooled crust. Drop dollops of cranberry sauce, add remaining cheesecake mixture, and top with more cranberry sauce. Swirl with a knife for a marbled effect.
- Chill: Refrigerate for at least 6 hours, or overnight, to set properly. Carefully remove sides of the springform pan when ready to serve.
Notes
Serve chilled. You can add extra cranberry sauce or a sprinkle of orange zest for garnish.
