Ingredients

- 2 1/2 cups shredded sweetened coconut
- 1/2 cup sweetened condensed milk
- 1 tsp vanilla extract (or coconut extract)
- Pinch of salt
- 1 cup semi-sweet or dark chocolate chips
- 1 tbsp coconut oil or butter (optional)
- Extra shredded coconut for garnishing (optional)
- White chocolate drizzle (optional)
Instructions
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix until well combined and sticky.
- If the mixture is too soft, refrigerate for 15–20 minutes.
- Scoop about 1 tablespoon of the mixture and roll it into a ball. Place each ball on a parchment-lined baking sheet.
- Refrigerate the balls for 30 minutes to firm them up.
- Melt the chocolate chips with coconut oil (if using) until smooth.
- Dip each coconut ball in the melted chocolate, coating fully. Let any excess chocolate drip off before placing it back on the sheet.
- Garnish with extra shredded coconut or a white chocolate drizzle if desired.
- Allow the balls to set at room temperature or refrigerate until ready to enjoy.
- Store in an airtight container in the fridge for up to a week.
Notes
If the mixture is too soft, you can chill it longer for easier handling. Experiment with different types of chocolate for coating.
