Ingredients

  • 2 1/2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla extract (or coconut extract)
  • Pinch of salt
  • 1 cup semi-sweet or dark chocolate chips
  • 1 tbsp coconut oil or butter (optional)
  • Extra shredded coconut for garnishing (optional)
  • White chocolate drizzle (optional)

Instructions

  1. In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix until well combined and sticky.
  2. If the mixture is too soft, refrigerate for 15–20 minutes.
  3. Scoop about 1 tablespoon of the mixture and roll it into a ball. Place each ball on a parchment-lined baking sheet.
  4. Refrigerate the balls for 30 minutes to firm them up.
  5. Melt the chocolate chips with coconut oil (if using) until smooth.
  6. Dip each coconut ball in the melted chocolate, coating fully. Let any excess chocolate drip off before placing it back on the sheet.
  7. Garnish with extra shredded coconut or a white chocolate drizzle if desired.
  8. Allow the balls to set at room temperature or refrigerate until ready to enjoy.
  9. Store in an airtight container in the fridge for up to a week.

Notes

If the mixture is too soft, you can chill it longer for easier handling. Experiment with different types of chocolate for coating.
