Ingredients

- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 cups shredded coconut
- 8 oz cream cheese, softened
- 1/4 cup unsweetened coconut milk or heavy cream
- 1 cup white chocolate chips (optional)
Instructions
- In a large bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and salt. Stir until smooth and fully combined.
- Gradually add the shredded coconut to the mixture and stir until well distributed.
- Using your hands or a spoon, scoop out small portions and roll them into bite-sized balls. Place them on a parchment-lined baking sheet.
- Refrigerate the tray for at least 30 minutes to firm up.
- (Optional) Melt the white chocolate chips and dip each coconut ball into the chocolate, then place back on the tray. Refrigerate again until chocolate hardens.
Notes
Store in an airtight container in the refrigerator for about a week. Freeze for up to three months for longer storage.
