- 1/2 cup unsalted butter, melted
- 2 cups semisweet or dark chocolate chips
- 1 1/2 cups heavy whipping cream (divided)
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (for topping)
- 2 tablespoons powdered sugar (for topping)
- Chocolate shavings or cocoa powder (for garnish)
Instructions
- Prepare the crust by mixing chocolate cookie crumbs with melted butter and pressing into a 9-inch springform pan. Refrigerate.
- Make the mousse filling by melting chocolate chips with 1/2 cup heavy cream, then folding in whipped cream with powdered sugar and vanilla. Spread over the crust and refrigerate until set, at least 4 hours.
- Whip cream with powdered sugar for topping and spread over the chilled mousse.
- Garnish with chocolate shavings or cocoa powder and slice into 12 servings.
Notes
For a fun twist, add fresh fruit between mousse layers or try different cookies for the crust.
