Description

A simple and delicious no-bake dessert that combines layers of graham crackers, creamy vanilla pudding, and rich chocolate frosting, mimicking the flavors of a chocolate eclair.


Ingredients

  • 1 box (14.4 ounces) graham crackers
  • 2 boxes (3.4 ounces each) instant vanilla pudding mix
  • 1 container (12 ounces) frozen whipped topping, thawed
  • 3 cups milk
  • 1 container (16 ounces) chocolate frosting

Instructions

  1. Arrange a single layer of graham crackers in the bottom of a 9×13 inch baking dish.
  2. In a large bowl, whisk together the milk and vanilla pudding mix until thick.
  3. Fold in the thawed whipped topping until the mixture is smooth and fully combined.
  4. Spread half of the pudding mixture over the layer of graham crackers.
  5. Add a second layer of graham crackers on top of the pudding.
  6. Spread the remaining pudding mixture over the second layer of graham crackers.
  7. Top with a final layer of graham crackers.
  8. Microwave the chocolate frosting in its container for about 30 seconds, or until it is soft and spreadable.
  9. Carefully pour and spread the melted frosting over the top layer of graham crackers.
  10. Refrigerate for at least 8 hours or overnight to allow the graham crackers to soften and the cake to set.
  11. Serve chilled.

Notes

Garnish with extra whipped topping or chocolate shavings. Can be stored in the refrigerator for 3 to 5 days.
