No Bake Chocolate Eclair Cake

Description

A delicious no-bake dessert featuring layers of creamy pudding, chocolate frosting, and graham crackers.


Ingredients

  • 2 sleeves graham cracker squares
  • 1 (16 oz) tub chocolate frosting
  • 2 (3.5 oz) packages of instant vanilla pudding mix
  • 3 cups milk
  • 1 (8 oz) container of whipped topping (thawed)

Instructions

  1. In a medium bowl, whisk together the instant vanilla pudding mix, milk, and thawed whipped topping until well combined. Set aside.
  2. In a 9 x 13-inch baking dish, create a single layer of graham cracker squares at the bottom.
  3. Spread half of the pudding mixture evenly over the layer of graham crackers.
  4. Place another layer of graham crackers on top of the pudding mixture.
  5. Spread the remaining pudding mixture over the second layer of graham crackers.
  6. Add a final layer of graham crackers on top.
  7. Cover the dish with plastic wrap and refrigerate for about 30 minutes to 1 hour.
  8. Remove the lid and aluminum foil from the tub of chocolate frosting. Microwave for about 15 seconds to soften, then stir until smooth.
  9. Remove the plastic wrap from the dish and evenly spread the chocolate frosting over the top layer of graham crackers.
  10. Cover the dish again with plastic wrap and refrigerate overnight.
  11. When ready to enjoy, slice into squares and serve chilled.

Notes

For added presentation, consider adding a dollop of whipped cream or fresh berries on top when serving.
