- 1 tsp pure vanilla extract
- 1/8 cup sour cream (or plain yogurt), room temperature
- 2/3 cup blueberry sauce (cooled)
- 1 1/4 cups heavy cream, cold
- 1/3 cup powdered sugar
Instructions
- Prepare the Blueberry Sauce: In a medium saucepan, combine blueberries, 1/2 cup sugar, water, lemon juice, and cornstarch. Heat over medium heat until it simmers, then cook for about 5 minutes until thickened. Transfer to a bowl and cool.
- Make the Graham Cracker Crust: Spray a 9-inch springform pan and line with parchment paper. Blend graham crackers into fine crumbs. Mix with 1/4 cup sugar and melted butter, then press into the pan and freeze.
- Prepare the Cheesecake Filling: Chill a mixing bowl, then beat cream cheese and 1/2 cup sugar until smooth. Add vanilla, sour cream, and cooled blueberry sauce. In another bowl, whip cold cream and powdered sugar until stiff peaks form, then fold into the cream cheese mixture.
- Assemble the Cheesecake: Pour the batter into the crust, cover with foil, and refrigerate for at least 6 hours.
- Add Toppings and Serve: Once set, remove from the pan, top with remaining blueberry sauce, and serve chilled.

Make sure cream cheese is at room temperature for a smooth filling. Let the cheesecake chill for at least 6 hours for the best texture.
