- 3 cups fresh or frozen berries (strawberries, blueberries, raspberries, blackberries)
- 1/3 cup granulated sugar
- 1/4 cup water or lemon juice (or 2 tbsp for frozen berries)
- 2 cups graham cracker crumbs
- 6 tablespoons melted butter
- 16 oz cream cheese (2 x 8 oz packages, room temperature)
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh berries for garnish
- Whipped cream (optional)
Instructions
- Make the Berry Jam Sauce by adding berries, sugar, and water or lemon juice to a saucepan. Heat over medium-low for 10-15 minutes until thickened, then cool.
- Prepare the Graham Cracker Crust by combining graham cracker crumbs with melted butter and pressing into an 8-inch springform pan. Freeze for 15 minutes.
- Make the Cheesecake Filling by beating cream cheese, sugar, salt, and vanilla until smooth. Whip heavy cream to stiff peaks and gently fold into the mixture.
- Assemble the Cheesecake by dividing the filling, folding in half of the berry jam sauce, and pouring onto the crust. Add plain filling on top, dollop remaining sauce and swirl.
- Chill by covering and refrigerating for at least 8 hours or overnight.
- Decorate with fresh berries and whipped cream before serving.
Notes
Ensure cream cheese is at room temperature for a smooth filling. Let the cheesecake chill overnight for best results. Experiment with different berries for flavor variations.
