Ingredients

  • 1/3 cup granulated sugar
  • 1/4 cup water or lemon juice (or 2 tbsp for frozen berries)
  • 2 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 16 oz cream cheese (2 x 8 oz packages, room temperature)
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh berries for garnish
  • Whipped cream (optional)

Instructions

  1. Make the Berry Jam Sauce by adding berries, sugar, and water or lemon juice to a saucepan. Heat over medium-low for 10-15 minutes until thickened, then cool.
  2. Prepare the Graham Cracker Crust by combining graham cracker crumbs with melted butter and pressing into an 8-inch springform pan. Freeze for 15 minutes.
  3. Make the Cheesecake Filling by beating cream cheese, sugar, salt, and vanilla until smooth. Whip heavy cream to stiff peaks and gently fold into the mixture.
  4. Assemble the Cheesecake by dividing the filling, folding in half of the berry jam sauce, and pouring onto the crust. Add plain filling on top, dollop remaining sauce and swirl.
  5. Chill by covering and refrigerating for at least 8 hours or overnight.
  6. Decorate with fresh berries and whipped cream before serving.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Let the cheesecake chill overnight for best results. Experiment with different berries for flavor variations.
