A delightful layered treat combining creamy cheesecake with fresh berries, all on a delicious graham cracker crust, without the need for baking.
Ingredients

- 3 cups graham cracker crumbs
- 2/3 cup unsalted butter, melted
- 2 1/2 cups blueberries (fresh or frozen)
- 2 tablespoons lemon juice
- 1 cup sugar
- 1 1/2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin powder (dissolved in 3 tablespoons cold water)
- 3 cups diced fresh strawberries
- 1/2 cup light brown sugar
- 16 oz. cream cheese, room temperature
- 1/2 cup unsalted butter, room temperature
- 1 1/2 cups powdered sugar
- 2 teaspoons vanilla extract
- 4 cups whipped cream (Cool Whip)
- 2 1/2 – 3 cups Cool Whip (for topping)
- 6 oz. white chocolate bar (for curls)
Instructions
- In a saucepan, combine half the blueberries, sugar, cornstarch, and lemon juice. Bring to a boil over medium-high heat, then reduce to medium-low and cook until softened. Mash the blueberries and add remaining berries, cooking until thickened. Let cool and refrigerate for at least 1 hour or overnight.
- In another saucepan, combine half the strawberries, lemon juice, brown sugar, and cornstarch. Cook until juices are released, then add remaining strawberries and continue cooking until thickened. Cool and refrigerate.
- Mix melted butter with graham cracker crumbs and press into the bottom of a 13×9-inch dish. Chill in the fridge.
- Beat softened cream cheese, butter, and vanilla for 2 minutes until smooth. Mix in powdered sugar and fold in whipped cream.
- Spread half of the cheesecake filling over the crust. Prepare gelatin and stir it into the cooled fillings. Layer the blueberry mixture over the cheesecake and freeze until set. Add remaining cheesecake filling and strawberry filling, then freeze again.
- Spread Cool Whip over the strawberry layer and refrigerate for at least 4 hours, or overnight.
- Use a vegetable peeler to shave white chocolate curls over the top.
- Slice and serve chilled, garnishing with extra berries or chocolate sauce if desired.

Ensure fillings cool completely before layering. Use room temperature ingredients for the filling for smoother consistency.
