Description

A delicious and easy-to-make no-bake cheesecake filled with a mix of fresh berries and a crunchy graham cracker crust.


Ingredients

  • Graham Cookie Crumbs: 2 cups (220 g)
  • Butter, Melted: 1/3 cup (80 g)
  • Cream Cheese, Softened: 32 oz (900 g)
  • Brown Sugar: 3/4 cup (150 g)
  • Vanilla Extract: 1 tsp
  • Frozen Berry Mix, Thawed and Drained: 6 oz (170 g)
  • Raspberries: 6 oz (170 g)
  • Blackberries: 10 oz (280 g)
  • Blueberries: 6 oz (170 g)
  • Heavy Cream: 1 1/2 cups (360 ml)
  • Gelatin Sheets or Powder: 2 sheets or 2 tsp (follow package instructions)

Instructions

  1. Prepare the crust: Blend the Graham cookies into fine crumbs and mix with melted butter. Press into the bottom of a springform pan.
  2. Make the cheesecake filling: Beat cream cheese, brown sugar, and vanilla until smooth. Mix in the thawed frozen berry mix and prepared gelatin. Fold in fresh berries and whipped heavy cream.
  3. Pour the cheesecake mixture onto the prepared crust and smooth the top.
  4. Chill in the refrigerator for at least 4 hours or overnight to set.
  5. Before serving, remove from the springform pan and decorate with additional fresh berries.

Notes

Ensure cream cheese is at room temperature for easier mixing. Use any combination of berries and increase gelatin for a thicker cheesecake.
