Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp butter, softened
  • 2 cups fresh or frozen berries (blueberries, strawberries, raspberries, etc.)
  • 1 cup boiling water
  • 1 box (4-serving size) strawberry-flavored gelatin, or berry flavor of your choice
  • 1 package (7g) unflavored gelatin
  • 1 pkg cream cheese, softened
  • 2/3 cup icing sugar
  • 1/4 tsp vanilla extract
  • 2 cups whipping cream, or whipped topping

Instructions

  1. Prepare the Crust: In a large bowl, mix graham cracker crumbs and granulated sugar. Blend in the softened butter until crumbly. Press the mixture firmly into a springform pan. Chill until needed.
  2. Prepare the Berry Mixture: In a small bowl, combine the strawberry-flavored and unflavored gelatin. Add boiling water and stir until dissolved. Mix in the berries and chill until syrupy.
  3. Make the Cream Cheese Filling: In a mixing bowl, beat cream cheese, icing sugar, and vanilla extract until creamy and well blended.
  4. Whip the Cream: In another bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Combine Mixtures: Fold the thickened gelatin and berry mixture into the cream cheese and whipped cream mixture.
  6. Assemble the Cheesecake: Pour the berry cheesecake filling over the chilled crust in the springform pan. Chill in the refrigerator for at least 2 hours until firm.
