Ingredients

  • 200g (1 1/2 cups) vanilla wafer cookies, crushed
  • 1/4 cup melted butter
  • 2 tbsp sugar
  • 450g (2 cups) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy cream
  • 1 box of instant banana pudding mix (3.4 oz)
  • 2 ripe bananas, sliced
  • 1/2 cup whipped cream
  • 1012 whole vanilla wafer cookies
  • 12 ripe bananas, sliced (for garnish)

Instructions

  1. Prepare the Crust: In a bowl, mix the crushed vanilla wafer cookies, melted butter, and sugar until combined. Press the mixture into the bottom of a springform pan or pie dish to form an even crust. Refrigerate for 15-20 minutes to set.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla extract and the instant banana pudding mix to the cream cheese mixture and beat until combined. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  3. Assemble the Cheesecake: Layer sliced bananas evenly on top of the chilled crust. Spread the cheesecake filling over the bananas, smoothing it out into an even layer.
  4. Chill and Garnish: Refrigerate the cheesecake for at least 240 minutes or overnight to allow it to set. Before serving, top with whipped cream, whole vanilla wafer cookies, and additional banana slices.
