Description

A creamy no-bake cheesecake that combines ripe bananas and a rich filling on a crunchy graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon banana extract (optional)
  • 1 cup heavy cream
  • 2 ripe bananas, mashed
  • 23 ripe bananas, sliced
  • Chocolate syrup, for drizzling
  • Caramel sauce, for drizzling (optional)

Instructions

  1. Lightly grease a 9-inch pie plate or springform pan.
  2. In a medium bowl, combine the graham cracker crumbs and granulated sugar.
  3. Pour in the melted butter and mix until the crumbs are moistened.
  4. Press the mixture firmly into the bottom of the prepared pie plate or springform pan.
  5. Place the crust in the refrigerator to chill while you prepare the filling.
  6. In a large bowl, beat the softened cream cheese until smooth and creamy.
  7. Add the powdered sugar, vanilla extract, and banana extract (if using), and beat until well combined.
  8. In a separate bowl, whip the heavy cream until stiff peaks form.
  9. Gently fold the whipped cream and mashed bananas into the cream cheese mixture until fully incorporated.
  10. Pour the filling over the chilled crust and spread evenly.
  11. Refrigerate the cheesecake for at least 4 hours, or preferably overnight, until firm.
  12. Before serving, arrange the sliced bananas over the top of the cheesecake.
  13. Drizzle with chocolate syrup and caramel sauce (if using).
  14. Slice and serve cold.

Notes

For best results, let the cheesecake chill overnight to allow flavors to meld. Store leftovers in the refrigerator for up to 3 days.
