Ingredients

- 2 large chicken breasts
- 1 tbsp olive oil
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup shredded mozzarella (or Swiss)
- 2 tbsp cream cheese (optional for extra creaminess)
- 1 tbsp chopped parsley (plus more for garnish)
- Salt & pepper, to taste
- 1/2 tsp paprika (optional)
Instructions
- In a skillet, heat olive oil and sauté mushrooms and garlic until soft and golden. Remove from heat and stir in cheeses, parsley, salt, and pepper.
- Slice a deep pocket into each chicken breast (do not cut all the way through). Season with salt, pepper, and paprika.
- Fill each chicken breast with the mushroom mixture. Secure with toothpicks if needed.
- In the same skillet over medium heat, sear chicken for 4–5 minutes per side until browned. Cover, reduce heat, and cook for 5–7 more minutes until the internal temperature reaches 165°F (74°C).
- Garnish with parsley and serve warm.
Notes
Pair with steamed vegetables, rice, or a fresh salad. Drizzle with olive oil or lemon juice for extra flavor.
