Mushroom-Stuffed Chicken Breasts

Description

Tender chicken breasts filled with creamy mushroom filling for a hearty and flavorful meal.


Ingredients

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup shredded mozzarella (or Swiss)
  • 2 tbsp cream cheese (optional for extra creaminess)
  • 1 tbsp chopped parsley (plus more for garnish)
  • Salt & pepper, to taste
  • 1/2 tsp paprika (optional)

Instructions

  1. In a skillet, heat olive oil and sauté mushrooms and garlic until soft and golden. Remove from heat and stir in cheeses, parsley, salt, and pepper.
  2. Slice a deep pocket into each chicken breast (do not cut all the way through). Season with salt, pepper, and paprika.
  3. Fill each chicken breast with the mushroom mixture. Secure with toothpicks if needed.
  4. In the same skillet over medium heat, sear chicken for 4–5 minutes per side until browned. Cover, reduce heat, and cook for 5–7 more minutes until the internal temperature reaches 165°F (74°C).
  5. Garnish with parsley and serve warm.

Notes

Pair with steamed vegetables, rice, or a fresh salad. Drizzle with olive oil or lemon juice for extra flavor.
