A delicious and comforting dish featuring tender chicken breasts filled with a rich mixture of mushrooms and cheese, all infused with garlic butter.

- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat.
- Add the minced garlic and chopped mushrooms. Sauté for about 5 minutes until the mushrooms are soft and golden.
- Season with salt, pepper, and dried thyme.
- Remove the skillet from heat and stir in the cream cheese and shredded mozzarella cheese until melted and smooth.
- Cut a pocket into each chicken breast by slicing horizontally, but not all the way through.
- Stuff each chicken breast with the mushroom and cheese mixture. Secure the pocket with toothpicks.
- Season the stuffed chicken breasts with salt and pepper.
- Place them in a baking dish and bake for 25-30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
- Once baked, remove the toothpicks, and serve the stuffed chicken hot. Garnish with fresh herbs, if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave.
