Delightful treat combining sweet and tart lemon flavors with a soft, buttery cookie crust.


Ingredients

  • 1 package refrigerated sugar cookie dough
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 cup powdered sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. Break up the sugar cookie dough and evenly distribute it into the muffin cups. Press it down to form a cookie crust.
  3. Bake for 10-12 minutes or until golden brown. Remove from the oven and allow it to cool in the pan.
  4. While the cookie crusts cool, prepare the lemon filling by whisking together the melted butter, egg, powdered sugar, flour, baking powder, lemon zest, lemon juice, vanilla extract, and salt until smooth.
  5. Pour the lemon filling into the cooled cookie cups, filling each about 3/4 full.
  6. Bake for another 15-18 minutes or until the filling has set and is lightly golden on top.
  7. Allow to cool completely in the pan before removing the cookie cups. Garnish with fresh mint leaves and a dusting of powdered sugar if desired.
  8. Serve and enjoy!

Notes

For an extra lemony flavor, feel free to add more lemon zest. Adjust sweetness by increasing powdered sugar in the filling.
