Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup creamy peanut butter
  • 1520 Reese’s peanut butter cups, chopped
  • 1 cup heavy cream
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • Caramel sauce for drizzling
  • Whipped cream for topping

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the chocolate cookie crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth.
  4. Add in the sour cream and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, beating after each addition.
  6. Stir in the peanut butter until the mixture is smooth.
  7. Fold in half of the chopped Reese’s peanut butter cups into the batter.
  8. Pour the batter over the prepared crust and smooth the top.
  9. Bake the cheesecake for 55-60 minutes, or until the center is set and the edges are lightly browned.
  10. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  11. Remove the cheesecake from the oven and let it cool completely at room temperature.
  12. Once cooled, refrigerate for at least 4 hours or overnight.
  13. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  14. Remove from heat and stir in the chocolate chips until melted and smooth. Let it cool slightly.
  15. Drizzle the chocolate ganache over the chilled cheesecake.
  16. Top with the remaining chopped Reese’s peanut butter cups, peanut butter chips, and caramel sauce.
  17. Add whipped cream for garnish if desired.

Notes

Ensure cream cheese is softened for a smooth batter and use a springform pan for easy removal. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
