- 2 cups cold coffee

Instructions
- In a small bowl, mix the cold water with the gelatin and let it sit for about 5 minutes to hydrate.
- In a saucepan, combine the cold coffee, water, sugar, and vanilla extract. Heat over medium heat, stirring until the sugar dissolves completely.
- Remove the saucepan from the heat and stir in the hydrated gelatin mixture until fully dissolved.
- Pour the mixture into a mold or individual cups and refrigerate until set, about 4-6 hours.
