Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 3 tbsp tahini
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss cauliflower florets with olive oil, paprika, cumin, turmeric, cinnamon, and salt until well coated.
  3. Spread the cauliflower in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until browned and tender.
  5. In a small bowl, whisk together tahini, honey, lemon juice, and a bit of water to achieve your desired consistency.
  6. Drizzle the tahini-honey sauce over the roasted cauliflower and garnish with fresh parsley. Serve warm.

Notes

Cut cauliflower into even-sized florets for even cooking. Adjust spices to taste, and consider adding a pinch of cayenne for heat.
