- 2 1/2 cups cake flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups granulated sugar
- 1 cup buttermilk (room temperature)
- 1/2 cup unsalted butter (softened)
- 1/2 cup vegetable oil
- 5 large egg whites (room temperature)
- 2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 1 cup unsalted butter (softened) for frosting
- 4 cups powdered sugar (sifted)
- 1/4 cup heavy cream
- 1 tsp vanilla extract for frosting
- Pinch of salt for frosting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, sift together the cake flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the vegetable oil, egg whites, vanilla extract, and almond extract (if using) to the butter mixture and beat until well combined.
- Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined to avoid overmixing.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in their pans for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, one cup at a time. Beat well after each addition.
- Add the heavy cream, vanilla extract, and a pinch of salt, and beat until the frosting is light and fluffy, adjusting consistency if needed.
- Assemble the cake by placing one cooled layer on a serving plate, spreading a layer of frosting on top, then placing the second layer and frosting the top and sides.
Notes
Make sure your ingredients are at room temperature for the best results. Don’t overmix the batter; mix just until combined to keep the cake light.
