  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes until well blended.
  4. Stir in boiling water (the batter will be thin) until fully combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. In a large bowl, beat together peanut butter, powdered sugar, cocoa powder, and vanilla extract until smooth.
  9. In a separate bowl, whip heavy cream until stiff peaks form.
  10. Gently fold the whipped cream into the peanut butter mixture until light and fluffy.
  11. Once the cake layers are completely cooled, place one layer on a serving plate. Spread a thick layer of frosting on top.
  12. Add the second cake layer and frost the top and sides evenly.

Notes

Make sure all ingredients are at room temperature for a smoother batter. Allow the cakes to cool completely before frosting to prevent melting.
