- 1 cup boiling water
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes until well blended.
- Stir in boiling water (the batter will be thin) until fully combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a large bowl, beat together peanut butter, powdered sugar, cocoa powder, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold the whipped cream into the peanut butter mixture until light and fluffy.
- Once the cake layers are completely cooled, place one layer on a serving plate. Spread a thick layer of frosting on top.
- Add the second cake layer and frost the top and sides evenly.
Notes
Make sure all ingredients are at room temperature for a smoother batter. Allow the cakes to cool completely before frosting to prevent melting.
