Description

A rich and indulgent Mocha Cheesecake made with dark chocolate and coffee, perfect for any occasion.


Ingredients

  • 26 Oreo cookies, crushed
  • 1/3 cup unsalted butter, melted
  • 5 ounces dark chocolate (50-70% cocoa), finely chopped
  • 1 cup whipping cream
  • 1 1/2 teaspoons instant coffee powder
  • 24 ounces full-fat cream cheese, room temperature
  • 1 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 4 large eggs, room temperature
  • 4 ounces dark chocolate (50-70% cocoa)
  • 1/2 cup whipping cream
  • 1 teaspoon instant coffee powder

Instructions

  1. Preheat the oven to 350°F (180°C). Wrap a 9-inch springform pan with tin foil.
  2. Crush the Oreo cookies and mix them with the melted butter. Press this mixture into the bottom of the springform pan and bake for 8-10 minutes.
  3. Melt the chopped dark chocolate with 1/2 cup of hot cream; stir until smooth. Mix the instant coffee into the remaining hot whipping cream.
  4. Beat the cream cheese until smooth, then add the sugar and cornstarch. Mix in the eggs one at a time.
  5. Divide the batter in half. Mix one half with the melted chocolate and the other half with the coffee cream.
  6. Layer the chocolate batter over the crust, then spoon the coffee batter on top. Place the springform pan in a roasting pan and pour boiling water around it.
  7. Bake for 50-65 minutes until the center wobbles slightly. Cool in the oven for 30 minutes, then refrigerate for at least 6 hours.
  8. For the ganache, heat 1/2 cup of cream until almost boiling. Pour over chopped chocolate and stir until smooth.
  9. Beat 1/2 cup of cream with instant coffee until stiff peaks form; pipe on the cooled cheesecake.
  10. Slice and serve the cheesecake.

Notes

Make sure all ingredients are at room temperature for a smoother batter. It’s better to make the cheesecake a day in advance for optimal flavor.
