- 26 Oreo cookies, crushed
- 1/3 cup unsalted butter, melted
- 5 ounces dark chocolate (50-70% cocoa), finely chopped
- 1 cup whipping cream
- 1 1/2 teaspoons instant coffee powder
- 24 ounces full-fat cream cheese, room temperature
- 1 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 4 large eggs, room temperature
- 4 ounces dark chocolate (50-70% cocoa)
- 1/2 cup whipping cream
- 1 teaspoon instant coffee powder
Instructions
- Preheat the oven to 350°F (180°C) and wrap a 9-inch springform pan with tin foil.
- Crush the Oreo cookies and mix with melted butter; press into the bottom of the springform pan and bake for 8-10 minutes.
- Melt chopped dark chocolate with 1/2 cup of hot cream; stir until smooth, mixing the instant coffee into the remaining hot whipping cream.
- Beat the cream cheese until smooth, then add sugar and cornstarch. Incorporate eggs one at a time.
- Divide the batter; mix one half with melted chocolate and the other half with coffee cream.
- Layer the chocolate batter over the crust, then spoon coffee batter on top. Place the pan in a roasting pan and fill with boiling water.
- Bake for 50-65 minutes until the center wobbles slightly, cool in the oven for 30 minutes, then refrigerate for at least 6 hours.
- For ganache, heat 1/2 cup of cream nearly to boiling, pour over chopped chocolate, and stir until smooth.
- Beat 1/2 cup cream with instant coffee until stiff peaks form; pipe on cooled cheesecake.
- Slice and serve chilled.
