  • 26 Oreo cookies, crushed
  • 1/3 cup unsalted butter, melted
  • 5 ounces dark chocolate (50-70% cocoa), finely chopped
  • 1 cup whipping cream
  • 1 1/2 teaspoons instant coffee powder
  • 24 ounces full-fat cream cheese, room temperature
  • 1 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 4 large eggs, room temperature
  • 4 ounces dark chocolate (50-70% cocoa)
  • 1/2 cup whipping cream
  • 1 teaspoon instant coffee powder

Instructions

  1. Preheat the oven to 350°F (180°C) and wrap a 9-inch springform pan with tin foil.
  2. Crush the Oreo cookies and mix with melted butter; press into the bottom of the springform pan and bake for 8-10 minutes.
  3. Melt chopped dark chocolate with 1/2 cup of hot cream; stir until smooth, mixing the instant coffee into the remaining hot whipping cream.
  4. Beat the cream cheese until smooth, then add sugar and cornstarch. Incorporate eggs one at a time.
  5. Divide the batter; mix one half with melted chocolate and the other half with coffee cream.
  6. Layer the chocolate batter over the crust, then spoon coffee batter on top. Place the pan in a roasting pan and fill with boiling water.
  7. Bake for 50-65 minutes until the center wobbles slightly, cool in the oven for 30 minutes, then refrigerate for at least 6 hours.
  8. For ganache, heat 1/2 cup of cream nearly to boiling, pour over chopped chocolate, and stir until smooth.
  9. Beat 1/2 cup cream with instant coffee until stiff peaks form; pipe on cooled cheesecake.
  10. Slice and serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator for 5-7 days or freeze for up to 3 months. Use high-quality dark chocolate for optimal flavor.
